1000 Stories built its reputation on an unusual finishing move: taking California red wine and resting it in used bourbon barrels. Applied to Cabernet Sauvignon, the technique gives an already-structured grape an extra layer of char, spice and sweet oak that most Cabernets at this price simply do not have. Each bottling carries a batch number, a nod to the small-lot way the wine is put together.
Expect dark cherry and cassis wrapped in vanilla, toasted oak and a whisper of caramel, with firm tannins and a long, warming finish. Give it twenty minutes open, then pour it alongside a ribeye, short ribs or anything off the grill. Built for cool evenings and big plates.
