David Ravandi founded 123 Organic Tequila on a single conviction: that certified organic agave, grown slowly and harvested at full maturity, needs very little help. Uno is the blanco, distilled in small batches and bottled without any barrel time, so nothing stands between the plant and the glass. Genuine organic certification is still rare in tequila, which is why this bottle keeps turning up on back bars run by people who ask where things come from.

Expect bright cooked agave, green pepper and a clean mineral snap, with citrus oil across a dry finish. Pour it neat at cellar temperature to appreciate the texture, or build a margarita where the agave still leads rather than hides. A good step up for anyone leaving mixto brands behind.
