Rested, not aged, is the whole idea behind a reposado, and Dos lands squarely in that window. It is the middle rung of the 123 Organic range, taking the same certified organic agave as the blanco and giving it a few months in American oak, enough to round the edges while leaving the agave in charge. For drinkers who find blanco too sharp and anejo too sweet, this is the honest middle.
Vanilla and light caramel arrive first, then cooked agave, orange peel and a whisper of cinnamon, finishing clean rather than syrupy. It sips well neat and makes an unusually good Tommys margarita, where oak and lime meet without a fight. A sound choice for a house agave bottle.
