Tres is the anejo in the 123 Organic range, and the numeral is the point, marking the third and most patient step of the house lineup. The same certified organic agave that goes into the blanco spends a year or more in American white oak, trading some of its raw green edge for depth and color. Small-batch production keeps the agave recognizable instead of burying it under wood, a balance plenty of anejos fumble.

The nose leans toward butterscotch, toasted oak and dried fruit, with roasted agave underneath and a warm, gently spiced close. This is a sipping bottle, best in a small glass with nothing added, and it holds its own where you might otherwise reach for an aged rum or a softer bourbon.
