Product Description
Diablito, the little devil, is the top of the 123 Organic pyramid and the bottle the distillery treats as its statement piece. Extra anejo status requires a minimum of three years in oak, and organic agave with this much structure survives that long in wood without collapsing into vanilla. Production runs are small and the pricing is unapologetically that of a collector pour.
Look for dark caramel, cocoa, dried cherry and cigar box, with cooked agave still legible through the oak and a long, dry, faintly peppery close. Serve it neat in a copita or a Glencairn, never chilled, and give it a few minutes to open. A serious gift for someone already at home with aged agave.
