A cristalino is an añejo that has been filtered clear, keeping the depth barrel time gives while losing the color. 1800’s version takes properly aged tequila and strips it back to clarity, landing somewhere between a blanco’s brightness and an añejo’s weight. In 1.75 litres it is the bottle for a bar that pours this style often.
It looks like water and drinks like something much older: vanilla, honey and toasted oak over cooked agave, with a silky texture and a long, gentle finish. Serve it neat and slightly chilled in a small glass, or over a single cube. Too interesting to bury in a mixer.
