Mango does something useful to a margarita: its soft tropical weight rounds off the lime without dulling it. 1800 builds this one on its blue agave tequila and bottles it ready to serve, fully mixed and at drinking strength. In 1.75 litres it is less a cocktail than a plan for the afternoon.
The flavor is ripe and sunny — juicy mango up front, citrus behind it, and a clean agave finish that keeps things from going syrupy. It is best very cold: over ice with a chili-salt rim, or blended into a frozen version. Good company for tacos, ceviche or a warm patio.
