Alquimia is a small Jalisco producer that has quietly built a reputation on carefully grown agave and unhurried production, and the blanco is where that work is most exposed. No barrel, no color, no time to hide behind — just the distillate as it came off the still.
Cooked agave sits at the center, clean and sweet, with citrus, mineral and a light peppery warmth on a crisp finish. It is worth sipping neat and cold before you reach for the shaker. When you do, it makes an unusually good margarita with nothing but lime and a little agave nectar.
