Amarone is made the slow way: grapes are harvested and then dried for months before pressing, concentrating everything before fermentation even begins. Allegrini is among the names most closely associated with the Valpolicella Classico zone, and this is one of the reference points for the style.
The result is powerful without being clumsy — dried cherry, fig and raisin over dark chocolate, sweet spice and a whisper of balsamic, with a dry, warming, remarkably long finish. Decant it an hour ahead. Serve it with braised beef, venison, risotto all’Amarone, or aged Parmigiano and nothing else.
