Olmeca Altos is made in the Los Altos highlands of Jalisco, where the agave grows sweeter and the volcanic soil leaves its mark. What sets it apart at this price is process: part of the juice is still extracted with a tahona, the traditional stone wheel, which is unusual outside far more expensive bottles.
Fresh cooked agave leads, with citrus, herb and a clean mineral note over a crisp, lightly peppery finish. It was designed with bartenders in mind and it shows — a margarita and paloma tequila of the first order, and perfectly pleasant sipped very cold.
