Joy Spence became the first woman to hold the title of master blender in the spirits industry when she took charge at Appleton Estate, and Signature is the everyday rum made under her direction. It is the house style at its most accessible and, arguably, its most useful.
Aged rums are married into a blend carrying orange peel, molasses, dried apricot and a light oak spice, finishing warm and clean. Sip it over ice if you like, but it truly shines in a daiquiri, a rum punch, or a mai tai where its character still reads through.
