Vanilla and toasted oak wrapped around cooked agave: that is what a year or more in barrel does to good tequila, and it is the whole argument for anejo. Aroma Azul makes its case with a bottle designed to be noticed and a liquid aimed at people who drink tequila the way they drink whiskey, slowly and without mixers.
The palate leans sweet and round, with caramel, baked agave, cinnamon and a soft leathery note underneath. The finish is warm and long. Pour it neat into a copita, let it sit a minute, and pair it with dark chocolate. Save the mixing for a younger bottle.
