Savennieres is one of the most singular white wine appellations in France, a small stretch of schist slopes along the Loire where Chenin Blanc turns unusually serious. Domaine des Baumard has been among its defining names for decades.
This is a dry, mineral-driven white with real structure: quince, ripe pear and chamomile over a waxy texture and a firm, stony finish. It needs air and a proper glass, and it keeps improving for hours after opening. Serve it cool rather than cold, with scallops, roast chicken, aged goat cheese or pork and apples.
