Chuck Wagner made his name at Caymus, and Bonanza is what he does when the goal is scale without embarrassment. Fruit comes from vineyards spread across California rather than one appellation, and the wine is released in numbered lots instead of vintages, which lets the cellar blend toward a steady house style year after year. Rich and rounded, with blackberry, cherry cola, mocha and toasted oak filling out a soft frame. The tannins are polished nearly smooth, so it drinks well the minute it is opened. Serve with steak, burgers, or a wedge of aged cheddar and nothing else.
