Whatever sharpness this had on release has long since settled, tannins knitting into the fruit and the aromatics turning from primary to savory. Expect mature character: dried dark fruit, leather, tobacco and forest floor, with a softened, mellow texture. Stand it upright for a day, then decant gently off any sediment. Serve with roast lamb, braised beef, or a wedge of aged hard cheese.
