Dark fruit, candied orange and old leather: the XO designation exists for exactly this kind of depth. Bou draws on eaux de vie held at least ten years, the legal minimum for the grade in France, and the extra decade in oak is not subtle. The spirit thickens, the edges soften, and the whole thing settles into something close to velvet.
Sip it neat and warm the glass in your hand. It opens with air, releasing fig, toasted almond and a long spiced finish. Cognac at this level belongs after dinner rather than in a shaker. A genuine gift bottle, and a good reason to keep proper glassware in the cabinet.
