Gaspare Campari mixed the first version of this bitter red aperitivo in northern Italy in 1860, and the recipe has stayed a closely held secret ever since. It is the ingredient that makes a Negroni a Negroni and an Americano worth ordering, and no other bottle substitutes for it. Every serious bar keeps one within reach.
The taste is unmistakable, bracingly bitter with orange peel, rhubarb and a wave of herbs and spice that lingers well past the swallow.
