Product Description
The hills between Florence and Siena have grown Sangiovese since long before anyone drew a boundary around them. Carobbio farms a small estate in the heart of that country, making Chianti Classico at estate scale rather than industrial scale, and the difference shows plainly once the wine is in the glass.
Sour cherry and dried herbs lead, with violet and a faint earthiness behind, framed by bright acidity and fine, gripping tannins that keep the finish savory. Decant briefly and serve just below room temperature. Pour it with bistecca, wild boar ragu, aged pecorino, or grilled vegetables and good olive oil.
