Casa Noble grows its own agave organically and takes the unusual step of aging in new French white oak rather than reused bourbon barrels, which is the choice that makes this anejo taste the way it does. French oak gives finer grain and gentler tannin, so two years in cask adds structure and perfume instead of a wall of vanilla. It is triple distilled, certified organic, and one of the most quietly serious bottles in the category.

The nose is floral and sweet, with vanilla, roasted agave, cocoa and a note of ripe fruit, and the palate is silky with a long, warm, faintly spiced close. Neat is the only way to do it justice, in a copita, at room temperature. A genuine sipping tequila for someone who drinks whisky the rest of the year.
