Extra anejo is the top tier of Mexican tequila law, requiring at least three years in oak before a drop reaches the bottle. Casino Azul puts its version in a hand-painted Horse and Carriage decanter, a liter of the darkest and most patient spirit the house makes.
Three-plus years in barrel push it toward whiskey territory: dried fruit, toffee, roasted agave and cigar-box spice, with a finish that lingers well past the sip. Drink it neat and slowly, in a glass with some room. A bottle for anniversaries and closing arguments, not for mixing.
