Extra anejo is the longest-aged category Mexican law recognizes, and Cava Antigua commits to it fully. Three years or more in oak turns blue agave into something dark and contemplative, closer in spirit to a fine brandy than to the tequila most people picture.
The result is layered: roasted agave, dried fig, toffee, vanilla and a warm oak spice carrying a long, mellow finish. Drink it neat at room temperature in a glass that lets the aromas gather. Save it for slow evenings and good company rather than for the cocktail shaker.
