Cava Antigua is a Mexican agave label, and the Silver is its unaged expression, bottled clear and straight from distillation with no barrel time to soften it. What you taste is the raw material, which is precisely why silver is the bartender's preferred pour.
Bright and peppery, with cooked agave, lime zest and a clean finish that does not overstay. It is at its best in a margarita, a paloma, or shaken with grapefruit and salt over plenty of ice. Chilled and neat works too, if you want to see what the distillate is really made of.
