Charles Heidsieck earned the nickname Champagne Charlie in nineteenth-century New York, and the house he founded in Reims still makes some of the most admired non-vintage Champagne in the region, largely on the strength of its unusually deep stocks of reserve wine.
Extended time on the lees gives it a rich, toasty character: brioche, roasted hazelnut, baked apple and a fine, persistent mousse, all held together by bright acidity. Serve it cool rather than icy, in a white wine glass. Superb as an aperitif and genuinely good at the table with roast chicken or shellfish.
