Chinaco comes from Tamaulipas rather than Jalisco, a distinction that matters to anyone who has followed tequila closely, and the brand has been an outlier in the category since the late 1970s. The anejo is the most contemplative bottling in the range, rested in oak until the agave and the wood reach an understanding.
The palate runs to cooked agave, vanilla and dried fruit, with caramel warmth and a whisper of pepper across a long, dry finish. This one belongs in a glass on its own, neat or over a single large cube, and it rewards the attention usually reserved for aged whiskey.
