Durango is cenizo country. The agave that grows in that high, dry northern landscape is a different plant from the blue agave of tequila, and it takes many years to mature before it can be roasted in an earthen pit. Clase Azul went there to make mezcal in partnership with local producers, and it applied the same obsessive approach to presentation that made its tequila famous, right down to a hand-finished bottle.

The spirit is restrained rather than aggressive, with gentle smoke over cooked agave, wildflower honey, green herbs and a long mineral finish. Drink it neat at room temperature in a small clay or glass cup, slowly, with nothing to distract from it. For the drinker who has moved past tequila and wants agave at its most expressive.
