Wild cenizo agave takes well over a decade to reach maturity in the mountains of Durango, which is the single fact that explains why this mezcal costs what it does. Clase Azul works with producers in the state to roast those plants over hot rocks in earth pits, distil in small volumes, and bottle the result in a vessel finished largely by hand. Very little of it exists in any given year.

On the palate the smoke is soft and integrated rather than smoky for its own sake, framing roasted agave, honey, damp earth and a cool mineral streak that lasts. Serve it neat and unchilled, in something small, and take your time. A bottle for a collector, or for a quiet celebration worth marking properly.
