Extra Dry is one of the great misnomers in wine: in sparkling terms it sits a step sweeter than Brut, not drier. That makes this the middle ground of the lineup, less austere than the Brut and less sugary than the Spumante, which is why it tends to be the most popular of the three.
Ripe apple and pear come through with a gentle sweetness and lively bubbles, finishing soft rather than sharp. Serve it very cold in a flute. It is well suited to wedding toasts, holiday tables and mimosas, where a touch of sweetness balances the orange juice nicely.
