Corralejo is distilled in Guanajuato rather than Jalisco, on the grounds of a hacienda where tequila has been made since seventeen fifty-five. That history is worth something, and so is the difference in soil and climate, which gives the spirit a character distinct from the Highland and Lowland norms.
The anejo is dark and rich, with toffee, vanilla, dried fig and toasted oak over a cooked agave base, finishing long and warm. Pour it neat and give it a minute. It is a sipping bottle for after dinner, and the tall blue bottle makes it an unusually good-looking gift.
