Product Description
The name points to volcanic slopes, and the wine drinks the way that suggests: taut, mineral and dry rather than fruit-forward. Whites grown on volcanic soils tend to carry a saline, stony quality that is difficult to manufacture, and this bottle leans into it rather than smoothing it away.
Expect citrus, white flowers and green almond over a stony, slightly savoury finish with firm acidity holding it together. Serve it cold but not frozen so the aromatics come through. Grilled fish, shellfish, roasted vegetables and salty cheeses all suit it well.
