Eiswein is made the hard way. Grapes are left hanging into deep winter, picked frozen, and pressed while still solid so only the most concentrated juice runs free. Yields are tiny and the gamble is real, which is why the half-bottle has always been the traditional format. This is a small pour of something that cost a whole season of patience.
Intensely sweet but bright rather than syrupy, with honeyed apricot, quince and candied citrus lifted by piercing acidity. Serve it cold in a small glass with a fruit tart, a firm aged cheese, or nothing at all as the last thing of the evening. A real treat for dessert-wine lovers.
