Diatom takes an unusual position on Chardonnay: no oak, no softening, nothing standing between the fruit and the glass. The result is a California white that behaves more like a cool-climate wine than the buttery style the state made famous.
Expect taut lemon, white flowers and green apple over a distinctly chalky, saline core, with a long, bone-dry finish. Serve it cold in a proper white wine glass.
