Every release the house makes is a vintage release. Dom Perignon declares only in years it believes can stand alone, then holds the wine on its lees for the better part of a decade, which is why a bottle tastes less like a blend and more like an argument for one particular harvest. The chalk soils of the Cote des Blancs and the pinot noir of the Montagne de Reims supply the raw material; patience does the rest.

The nose runs to white peach, toasted brioche and a whisper of iodine, and the palate is taut, saline and long, with a mousse fine enough to register as texture rather than bubbles. Pour it at cellar temperature in a proper glass. It rewards oysters, aged hard cheese and a reason to celebrate.
