Product Description
Appassimento is the great trick of the Veneto: grapes left to dry on racks for weeks after harvest, losing water and concentrating everything else. It is the same method behind Amarone, applied here to a wine that costs a fraction as much.
The result is unusually rich for the price, with dried cherry, raisin, plum and a cocoa-and-tobacco depth, full bodied and velvety with a warm, lingering finish. Serve it at cool room temperature in a large glass. It stands up to braised beef, venison and aged Parmigiano, and satisfies entirely on its own.
