Amatitan, in the lowlands of Jalisco, is where Don Abraham grows and distills everything it sells. The estate is certified organic and the tequila is made without additives, which in a category full of quiet sweeteners is worth stating plainly. Agave comes off the producer's own fields at full maturity, is cooked slowly, and then rests in oak until the spirit softens without losing the plant it came from.

Cooked agave stays in the foreground, joined by vanilla, dried apricot, toasted almond and a clean mineral finish. There is no syrupy weight to it, so drink it neat at room temperature in a small glass and give it a few minutes to open. Built for the drinker who has started reading labels.
