Don Julio 70 arrived in 2012 to mark seven decades since Don Julio Gonzalez laid out his first fields, and it introduced a category in the process. This is a genuine anejo, rested eighteen months in American white oak, then filtered until it runs as clear as a blanco. The oak stays in the flavor even though it has left the color.
The result reads clean and bright on the front palate, then turns to vanilla, light caramel and a whisper of toasted wood. It is unusually easy to drink neat over a single large cube, and it makes a striking margarita for anyone who wants aged depth without the amber.
