Alma Miel takes its name from the honey-sweet juice pressed from cooked agave, and that is the whole idea behind it. Don Julio built this joven expression around agave grown high in the Jalisco highlands and roasted slowly, keeping the raw sweetness of the plant front and center rather than handing the job over to a barrel.
