Julio Gonzalez was seventeen when he began distilling, and the house he built made its name on agave from the Los Altos highlands rather than the valley floor. The anejo is where that fruit meets time: eighteen months in American white oak, bottled at a strength that keeps the agave audible under the barrel.
Amber in the glass, it opens with caramel and vanilla, then settles into roasted agave, dried fruit and a dry, warming finish. Pour it neat and give it a minute. It suits after-dinner sipping and converts whiskey drinkers who assumed tequila was only for mixing.
