Don Julio Blanco is that fruit bottled without barrel time, and it has become the standard-issue premium blanco in a great many American kitchens for exactly that reason.
Clean and lively, with lime zest, fresh agave and a pepper edge that keeps it from turning soft. This is the workhorse of a good margarita and the backbone of a paloma, but it holds up neat and lightly chilled if you want to taste the agave on its own terms.
