Destileria Serralles has been distilling in Ponce since 1865, and its limited vintage releases are where the house shows off the deep end of its warehouse. This 2005 edition draws on rum laid down that year and held long past the point where most Caribbean rum is bottled and shipped.
Expect a dark, unhurried pour: oak, toffee, dried fruit and a touch of leather over the cane sweetness underneath. Drink it neat or with a single cube and leave the mixers alone. One for collectors and for anyone who has learned that good rum rewards the same attention as good whiskey.
