El Mayor comes from Destiladora Gonzalez Lux in Jalisco, a family operation that has been making tequila for generations and still cooks its agave in traditional brick ovens. The anejo is the most patient bottling in the line, and it is where the house preference for a soft, rounded style becomes most obvious.
Time in oak brings caramel, toasted vanilla and dried fruit around the cooked-agave core, finishing long and gently sweet with a little cinnamon. Serve it neat at room temperature in a small glass, or over one large cube after dinner. A quietly impressive anejo that costs considerably less than it tastes.
