Amarone is made the slow way. Grapes are dried on mats for months until they shrivel and concentrate, then fermented dry into one of Italy's most powerful reds. Every bottle represents a harvest that gave up most of its volume on purpose.
Expect dried cherry, fig, cocoa and a savory, almost balsamic edge, with warmth and grip carrying a long finish. This is a wine for braised beef, aged Parmigiano, venison, or a cold night and a good chair. Decant it an hour ahead and serve it in large glasses.
