Product Description
Ice wine is a gamble against the calendar. The fruit is left hanging into deep winter, waiting for a hard freeze, then harvested and pressed while still frozen solid. Most of the water stays behind as ice, and what runs off is pure concentration.
The result is lush and honeyed, with apricot, peach and citrus marmalade lifted by acidity sharp enough to keep it from cloying. Serve it very cold in small pours after dinner, with fruit tart, creme brulee, blue cheese or aged cheddar. A little goes a long way.
