Flor de Cana has been distilling at the foot of the San Cristobal volcano in Nicaragua for more than a century, and the house is known for aging its rum naturally, without added sugar. Extra Seco is the light expression, and it is better than the category usually demands.
Four years in barrel, then filtered clear, it keeps a gentle sweetness of vanilla and light toffee over a crisp, dry finish. That makes a far more interesting daiquiri than most white rums manage, and it holds up in a mojito or a well-made punch.
