Tobala grows wild, small and slow, tucked into shaded hillsides where it takes many years to mature and refuses to be farmed efficiently. That scarcity is the reason mezcal made from it costs what it does, and why Fosforo bottles this one at full artisanal strength. The penca designation points to the agave leaves going into the roast, which pushes the smoke and the vegetal depth further than a standard espadin ever reaches.

Smoke sits on top, but underneath there is green pepper, wet clay, lime peel, tropical fruit and a long mineral finish. Sip it neat at room temperature from a wide clay or glass copita, in small measures, with orange and salt nearby. For the drinker who has moved past espadin.
