Vermouth di Torino is a protected Italian designation with roots in the late eighteenth century, when Piedmontese producers began fortifying local wine with alpine botanicals. Giacomo Sperone works in that tradition, and the result belongs in the refrigerator of anyone who takes cocktails seriously.
The profile is aromatic and bittersweet, with dried cherry, orange peel, vanilla and the wormwood bitterness that defines the category, finishing clean rather than syrupy.
