Lambrusco is the everyday sparkling red of Emilia-Romagna, poured alongside the richest food in Italy for a reason: the bubbles and acidity cut straight through fat. After a long spell out of fashion it is firmly back, and bottles like this one show why the region never stopped drinking it.
The color is deep purple with a bright pink foam, and the flavor runs to blackberry, violet and ripe plum with a lightly frothy texture and a refreshing lift. Serve it cold, colder than you would serve a still red. It is made for cured meats, parmesan, pizza and fried food, and it is one of the most enjoyable wines to bring to a party.
