Glenmorangie has the tallest stills in Scotland, and the delicate spirit they produce takes unusually well to cask finishing, a technique the Highland distillery helped pioneer. This bottling matures that lighter malt in American oak before a final stretch in casks that once held Sauternes, the great sweet white wine of Bordeaux.
The finish leaves honey, lemon curd, candied ginger and coconut over a soft vanilla base, with a dessert-like sweetness that stays bright rather than heavy and a long, spiced close. Serve it neat in a tulip glass after a meal. A fine match for lemon tart, custard desserts and blue cheese, and it converts people who think they dislike Scotch.
