Very Superior Old Pale is one of the odder phrases in drinks — a nineteenth-century English shipping shorthand that stuck and eventually became a legal category. In Hennessy’s hands it means eaux-de-vie matured in French oak well past the minimum, blended for roundness, and bottled as the house’s everyday-luxury tier. This is the bottle for when VS feels thin and X.O feels excessive.
Dried apricot, orange peel and clove sit over toasted almond and vanilla, finishing warm and slow rather than hot. Neat in a tulip glass is ideal, though it also makes a notably better old fashioned than most bourbons manage.
