Vanilla, dried apricot and toasted almond over a spine of cooked agave — this is what happens when anejo is given more than double the legal minimum in barrel. Casa Herradura ages this for over two years in American oak at its estate in Amatitan, and the extra time is the entire argument. It is one of the few widely available anejos that drinks like a genuinely aged spirit rather than a tequila with a tan.
The texture is round, the finish long and gently spiced. Neat in a copita is the right call. If you must mix it, an agave old fashioned is the only cocktail that does not waste it.
