Estate-grown agave, open-air fermentation the distillery has used for generations, and a short rest in oak before bottling — Casa Herradura’s Silver is old-fashioned in the literal sense. Amatitan has been making tequila this way since 1870, and the result is a blanco with more weight and less harshness than the category average.
Crisp and bright: cooked agave, white pepper, lime peel and a faint olive-brine savouriness over a dry finish. This is the standard-bearer for a proper margarita and it makes an excellent paloma. Serve it cold, and resist burying it in sweet mixers.
